The
Eleven Waters restaurant creates an environment that mixes rustic charm
with a modern bistro setting, where you can peacefully enjoy brunch
under the morning sun, or sit down with a fine glass of wine before
indulging in a decedent meal.
The bar is carved into a historic renovated hotel barber shop, and has a speakeasy feel that transports you to a different time in upstate New York.
Hand-Crafted Cocktails & Local Craft Beer
Eleven
Waters is known for their eclectic cocktail menu, the drink names are a
playful nod to a bygone era when the Art of the Mix was a true treat.
There are five different signature cocktails, as well as a rotating menu of seasonal cocktails. You can get beer right from the bottle, or try one of our New York Craft draft selections.

The signature cocktail menu includes:
- The Clean Shave
Knapp Distillery's Cucumber Vodka, Barrow's Intense Ginger Liqueur, fresh cucumber, lemon juice, Saranac Ginger beer.
- The Rachel
Cruzan Rum, blueberry puree, fresh mint.
- The Undercut
Cruzan Rum, lime juice, grapefruit, maraschino liqueur.
- The Mullet
Maker's 46, simple syrup, and fresh mint.
- The Beehive Mule
Jim Beam Honey, Saranac Ginger Beer, lime.
Breakfast & Brunch
To
get started with your breakfast or brunch, you can't go wrong with a
Bloody Mary. After all, the Eleven Waters' Bloody Mary did take home
first place in both the taste and presentation categories at the 2020
Syracuse Winterfest. They also serve bottomless mimosas, if you're in
the mood for something fruity.
On the morning menu you'll find classics like Buttermilk Pancakes and an All-American Breakfast, but there are also some unique dishes, like the B.L.T. Bagel, or the Pork Belly Grilled Cheese, which includes sourdough bread, gouda, NY cheddar, arugula, and their signature root beer ketchup.
Dinner Menu
The perfect way to begin every dinner is by sharing a round appetizers with the table. The NY Cheese Board features brie, aged NY cheddar, spiced apple chutney, bacon onion jam, gherkin pickles, and crostini.
If you're craving something light to start off, try the pan-fried Brussels Sprouts, which are drizzled in a honey Dijon glaze and sprinkled with toasted almonds and red onions.
The entrée selection includes indulgent dishes like Red Wine Braised Short Ribs, Grilled Beef Tenderloin, Cedar Plank Grilled Salmon, and Lobster Mac & Cheese. Pair your entrée with some sautéed spinach, truffle French fries, seasonal vegetables, or sweet potato wedges.
